Taps have become one of the most iconic sweets of Cadaqués. They are small artisanal sponge cakes, light and extraordinarily tender, coated with a thin layer of icing sugar and delicately aromatised.
Their flavour is reminiscent of a freshly baked traditional sponge cake: sweet, soft and fluffy, with subtle hints of lemon and a texture that practically melts in your mouth.
Popular tradition links them to the old sailors of Cadaqués and to the rum that arrived from Cuba, which is why they can still be found served with rum, flambéed or with coffee cream. The Cabrisas family, responsible for their traditional making, attributes the creation of today's tap to Sebastià Cabrisas, who accidentally obtained its curious shape while baking small sponge cakes in individual moulds.
More than a dessert, taps are already a small part of the gastronomic identity of Cadaqués.
